Filling Their App-PIE-tites

We couldn’t finish out the month of November without a little Thanksgiving holiday celebration, so last week Chef Yohn fired up the stove, pulled out his knives and cutting board, measured out all of his ingredients and made special potato pies for our trio of pigs over at the ZooFarm.

The recipe is simple, and the end product looks delicious, but the real question is: did Ricky, Lucy and Ethyl pig out? Or did they turn up their noses at Chef Yohn’s creation for the celebration? Read on to find out!

suey potato pie

INGREDIENTS:

• 2 apples

• 2 sweet potatoes

• 2 teaspoons pumpkin pie spice

• 1 1/2 cups coconut flour

• two bananas

• 1/2 cup water

DIRECTIONS:

Step 1: Chop up apples and sweet potatoes in chunks.

Step 2: Steam the chunks in a pot on the stove for 20 minutes or until tender. While steaming, proceed to step 3.

Step 3: Mix together flour, bananas, and water in food processor until a play-doh like consistency.

Step 4: Pat out dough mixture into small pies as pictured.

Step 5: Remove steamed potatoes and apples and blend with pumpkin pie spice in food processor.

Step 6: Scoop out mixture onto pie crusts.

Step 7: Let pies cool before serving to the pigs!
